Method
Prepare the Biscuit Base
1. Gently melt the butter and golden syrup together until fully liquid
2. In a bowl, combine the melted butter & syrup with the digestive biscuit crumbs
3. Mix until the crumbs are evenly coated & the mixture holds when pressed
4. Press the mixture into your chosen silicone chocolate bar moulds or onto a lined tray, forming a solid base layer
5. Melt & temper the Cocoa King Chocolate (dark or milk) to your tempering curve (e.g. heat to ~45–50 °C, cool to ~28–29 °C, then reheat slightly if needed)
6. Brush a thin layer of the tempered chocolate into the moulds (or over the biscuit base) let it set slightly, then apply additional layers until you reach your desired thickness. This “shell” will hold the filling
7. Pipe approximately 15 g of RTU Mallow into each bar (over the semi-set chocolate)
8. Sprinkle 15–20g of digestive biscuit crumb on top of the mallow & gently press down to embed crumbs into the surface
9. Cover & seal the mallow & crumb with more tempered Cocoa King Chocolate. Smooth the top surface
10. Allow bars to fully set and harden
11. Optionally, melt the 30 g of Cocoa King White Chocolate & drizzle over the bar surface for a decorative finish. You can also sprinkle remaining biscuit crumbs for texture
