Festive Chocolate Cookie Bars

Ingredients

450g Butter
400g Granulated Sugar
2 Large Eggs
1tbsp Vanilla Extract
720g Plain Flour
400g - 600g Chocolate Drops
400g Biscuit Crumb
4tsp Baking Powder
2tsp Salt
Christmas Sprinkles
300g - 500g Cocoa King Caramel Sauce
500g Unsalted Butter - Room temperature
1kg Icing Sugar
1tbsp Vanilla Extract

Method

1. Preheat the oven to 160 degrees and line 2 baking trays with parchment paper

2. Mix together your butter and sugar until light and fluffy

3. Beat in the 2 eggs

4. Add in the vanilla extract

5. Slowly add in the flour and combine until a dough is formed

6. Add in the biscuit crumb and chocolate drops

7. Half the dough and press into the two baking trays evenly

8. Bake for 15 - 20 minutes, or until golden

9. Leave to cool in the tins

10. Whilst cooling, lets prepare the buttercream frosting, take the room temperature butter and slowly add in the icing sugar and vanilla extract, mix until it becomes thick (the spoon should stand up)

11. Once cooled spoon on the Cocoa King Caramel Sauce until fully covered and add the buttercream frosting to finish

12. Sprinkle the Christmas sprinkles over the top and allow to set fully, slice into the desired amount and enjoy!
