Mallow Snowball Teacakes are pending! Create these irresistible snowball teacakes with a delightful crunchy biscuit base, a light & soft marshmallow filling, rich salted caramel filling & of course, a smooth white chocolate outer shell. Finished with decedent coconut flakes, these festive treats are perfect for gifting, sharing or simply indulging with a cup of tea as a mid day treat!

Mallow Snowball Teacakes Biscuit Base

Ingredients

250g Unsalted Butter (room temperature)
150g Caster Sugar
1 Large Egg Yolk
350g Plain Flour
1 tsp Vanilla Extract
1 Pinch of salt

Method

1. Preheat your oven to 180°C & line baking trays with parchment paper

2. In a bowl cream the butter & sugar together until light & fluffy

3. Mix in the egg yolk & vanilla extract

4. Add the flour & salt, stirring until a soft dough forms

5. Roll out the dough to around 5mm in thickness, then cut into 30 round biscuits (about 5cm wide)

6. Bake for around 10–12 minutes or until they are lightly golden

7. Cool completely on a wire rack

Mallow Snowball Teacakes Topping

Ingredients

1kg Cocoa King White Chocolate Compound
1kg Cocoa King Mallow
250g Cocoa King Salted Caramel Sauce
Coconut Flakes

Method

1. Melt the white chocolate compound gently until it has a pourable thickness

2. Brush a thin layer into silicone dome moulds and place in the fridge to chill & set, then repeat this for a stronger shell

3. Pipe 30g of the marshmallow into each shell, leaving a small hollow in the centre

4. Spoon 8g salted caramel into the hollow

5. Top with a biscuit base slice disc & seal with a little melted white chocolate

6. Chill until the whole thing has set, then carefully demould!

7. Optional - Roll or sprinkle with coconut flakes to decorate

7. Serve & enjoy!
